Susan LeBaron has been with Wesleyan Publishing House (WPH) for 18 years and is now the Project Communications Manager. Besides managing the publishing process for all WPH resources, she also serves as production editor, processes contracts and handles many other publishing details. Her earliest memories working for WPH include hosting the annual chili cook-off and organizing writers’ conferences.

Susan is excited to strategize ways to strengthen and enhance WPH curriculum in 2020. She is highly organized and process-oriented, and those skills shine when she works through all the pieces of a project or event. One of her favorite things to do is interact with authors and writers. Some of her favorite projects have been organizing exhibit halls and booth layouts for Wesleyan events, and her favorite WPH resource is whatever book is currently in production (she cannot play favorites because she enjoys each manuscript).

As we get closer to Christmas, she looks forward to family time, graham cracker pudding (recipe below!), date pudding, snowball cookies, and remembers:

Graham Cracker Pudding

Ingredients and Instructions:

2 cups dark brown sugar
1 stick butter
6 Tablespoons of water
Mix in saucepan, boil about 5 minutes until syrup is light brown.

Add 4 cups of milk and heat until just about boiling. (Don’t stress caramel seizing up when you add the milk. It will smooth out as you stir.)

Combine in separate bowl:
2/3 cup cornstarch/flour mixture
1/4 teaspoon salt
4 Tablespoons sugar
3 beaten eggs

And just enough milk to pour easily. Pour into caramel mixture.

Cook until thick, stirring constantly.

Remove from heat and add 2 teaspoons vanilla. Cool completely.

In large glass bowl, layer pudding, whip cream, and graham cracker crumbs. Repeat for a second layer, ending with crumbs on top.

Top with cherry!
